Alvin shows off a beautiful cut of beef that he bought from Costco. According to him, it was on sale, and he got it for himself as a birthday present.

He sprinkled salt and made sure that every part of the tenderloin was coated with fine salt. He promised to take good care of it as he gently wrapped it to give it that round shape.

He took a clean towel and started wrapping the beef. According to Alvin, it was like swaddling a baby.

He then placed his “Baby Wellington” inside the fridge to rest for 48 hours. This should give the beef enough time to absorb the salt.

According to Alvin, the duxelle’s flavors grow over time that’s why he covered it with saran wrap and placed it in his fridge, along with the beef.

Alvin unwrapped the beef and seared it. Then, he placed it on his chopping board layered with saran wrap. He then gently brushed a nice coat of mustard yellow.

After enveloping the beef with the savory yellow color, he added a touch of black pepper. He covered it with saran wrap and a towel once more to ensure that the cut of beef absorbs all those flavors.

For an hour, Alvin waits for the beef stock and red wine to reduce. He decided to enjoy his wine and play the piano as he waits.

When he came back, his kitchen was filled with a tempting aroma. It was time for the next step.

He mixed butter with flour and then pours it in his sauce, thickening it in the process, then sets it aside.

Soon, his elegant sauce resembles melted chocolate. He strains it and sets it aside for the big event.

Alvin woke up feeling happy because it was a snowy day, the perfect day to enjoy his Beef Wellington.

He started working on his pastry, the hero of this dish. Like a plain canvass, he gently brushed it with a mix of egg yolk and milk.

He wrapped the beef around the pastry and then sealed it with the saran wrap once more. Then, he prepared another sheet of pastry dough and used a crisscross cutter for its design.
